1Salmon Fillet
240 g
Baby Spinach (Fresh)
100 g
Onion
0.5 pc
Cherry Tomatoes

Steps

Heat 1/2 tbsp olive oil in a pan on a medium heat then gently place the salmon fillets, skin side down and sprinkle with salt. These should cook for 12-14 minutes, turning over half way.

Heat the other 1/2 tbsp olive oil in another pan, add the onion. Sizzle for about a couple of minutes, then gently place the spinach and tomatoes on top. Set the heat to medium.

Sprinkle with a pinch of salt, and leave the spinach to wilt in the pan on a low to medium heat for about 10 minutes.

Don’t forget to turn your salmon fillets after 7 minutes. Plate up and serve.
