Smokey Cod, Tomato And Chickpea Tray Bake

I’ve been looking out for healthy ways to prepare cod, and by combining several different recipes I came up with this, which was a real treat.
Ingredients
2Cherry Tomatoes
100 g
Red Onion
1 pc
Canned Chickpeas
100 g
Smoked Paprika
1 tsp
Lemon Juice
1 tsp
Parsley
10 g
Cod Loin
280 g
Staples
Olive Oil
1 tbsp
Salt
1 pinch
Steps

Preheat the oven to 220C then gather the ingredients, rinse the chickpeas and slice the red onion

Add the onion and tomatoes into a baking tray, season with salt and pour over 1 tbsp oil. Put in the oven for 15 minutes

Make sure the cod is cooked and flakey, then sprinkle with lemon juice and parsley to serve!

Mix in the chickpeas and roasted red peppers, then place the cod loin on top and sprinkle them with the smoked paprika and another splash of olive oil. Return the tray to the oven for another 15-20 minutes
